4 cups fresh or frozen corn
3 eggs
1 cup heavy cream
1 cup crushed butter crackers (about 30 crackers), divided
2 tablespoons butter
1 tablespoon sugar
1/4 cup parmesan cheese, divided
1 tablespoon finely chopped rendered bacon
Salt and pepper to taste
Directions
In a large bowl, combine the corn, eggs, cream, 3/4 cup cracker crumbs, butter, sugar, bacon, cheese, salt and pepper. Fill 2 inch tartlets 3/4 of the way full and dust the top with the remaining cheese. Bake in a 350 degree oven for 8 to 10 minutes. Enjoy
